There is something magical about the combination of cinnamon, cloves, ginger, nutmeg and sugar... These are the quintessential flavours of autumn and of Christmas.
This pumpkin loaf is beautifully fragrant and almost reminds of old fashioned ginger bread.
420g AP or bread flour
480g cooked and mashed pumpkin
4 eggs (beaten)
5g baking powder
7g bicarbonate of soda
10g pumpkin spice
220g sunflower oil
1) Combine all dry ingredients in one bowl and then all wet ingredients in a separate bowl. 2) Slowly add dry ingredients to the wet mixture and beat well.
3) Divide the mixture between two greased loaf pans and bake for 65 minutes at 180C or 350F.
4) The bread should puff up and crack open at the top.
5) Allow the loaf to cool completely before slicing.
